In response to the recession, we're trying to eat in more and do what they did in the 30's, cook beets. Unfortunately, I had no freakin' idea how to cook beets. We roasted them for nine hours and then turned our fingers and the counter beet red (hee hee) trying to peel them. I was peeling gd beets at midnight. The happy outcome is now I have enough chilled beets for 8 meals and they are delicious with goat cheese. These economical meals will keep us on Easy Street and not in Hooverville.
