It's time to make cheese again, although I am in need of some supplies. The most important one is milk. I've tried a variety of milks now, including some great cow juice from the Ronnybrook Dairy. They have a shop in Chelsea Market that features the sign shown in today's picture. It's great milk but cost prohibitive. At $14 a gallon, I'd be better off flying to Parmesan to get parmesan.
I now go to the gourmet store Foragers Market in Dumbo to get Sky Top Farms non-homogenized whole milk. I'd like to also try Hudson Valley Fresh brand, but they only carry skim, so it's all Sky Top. Maybe I'll make a mozzarella. Or a Jack. It's so hard to decide.
