Healthy Eggplant Parmasan Compromise

Marriage is all about compromise. And a fear of dying alone and being discovered by the Con-ed man. Today's picture is a healthy eggplant parmesan I cooked. It's healthy because rather than fry the eggplant, I grilled it. After saucing and stacking, I covered in panco and browned it.

The compromise part comes into play with the sauce. The mlw prefers a chunky, fresh tomato sauce. I like my sauce well-cooked and pureed. So the eggplant dish gets filled with the former sauce and then I blend and cook the remaining gravy in another pot. So when dinner is served, both diners are happy.

This is how I spend my Tuesday nights because I don't go to pubs on school nights anymore. It tasted really good, btw.
